Well, you’ll have to ask the cow that. Jersey cows produce less milk than Holstein Friesian cows, but the milk does have a naturally higher fat and protein content. And we don’t skim our milk. Our full fat Jersey milk contains an average 6% fat, whereas the statutory standard for full fat milk is 3.5%. Jersey milk contains 4.2 g of protein per 100 ml, whereas normal milk contains an average 3.5 g. This fat provides a lot of flavor and results in awesome milk. At least that’s what we think, but maybe we’re a bit biased!
